Dear Diary,

       Remember when I put on my packing list to take some trail mix bars in case the food wasn’t very good?  Well, I only had a couple of them (and that was on the plane and in the airports).  I really enjoyed the food (especially the pizza, gelato, and desserts, as well as the local beer).  So, Diary, I could have saved room in the suitcase for another bottle of wine.  Glad I took the bubble wrap, though.  P.



YUM.  My favorite salad of all time - I ordered it anytime I could.  The cheese makes it so good - a special white Bulgarian cheese. Unfortunately, I haven’t found it in the states. 

 One onion

4 medium size tomatoes

half a cucumber  (Bulgarian cucumbers are the best-very crisp)

1 green pepper

1 red pepper

chopped parsley

Grated white cheese (YUM)

Salt, pepper, vinegar and olive oil

Optional:  olives

Cut all ingredients in slices or cubes.  Season with salt, pepper, add the chopped parsley, 1 tbsp vinegar and 2 tbsp olive oil and mix well.  Sprinkle with white cheese - lots of white cheese.  Enjoy!
